Around 1.52 million people in Germany are vegan according to the opinion research institute IfD Allensbach (2023). The reasons for this are diverse, but the trend towards vegan nutrition has not only significantly increased among animal rights activists in recent years. The economy has long since discovered the market potential of products and services that are in demand mainly by non-vegans: cafes, restaurants, supermarkets, as well as the tourism and clothing industries offer an increasing variety of vegan options. Veganism is not just a mega trend. For many, it is a way of life and a sustainable alternative to conventional dietary habits in order to advocate for animal welfare and ensure the long-term global survival conditions of humanity.
In vegan nutrition, animal products such as meat, fish, milk, eggs, and honey are consciously avoided. Most vegans choose this lifestyle for ethical and moral reasons, followed by motives such as health, ecology (e.g. climate protection), global nutrition, and others. But also, more and more non-vegans are reducing their consumption of animal foods, such as the so-called flexitarians, who want to eat significantly less meat, or people with food intolerances. For the saturated food industry, the increasing demand for vegan products with new target groups is both a challenge and an opportunity: As the first university, FHM addresses the societal development of veganism and combines sustainability, vegan lifestyle, and food management in an academic education.
Starting with the sociocultural backgrounds of eating and the significance of norms and values for eating behavior, the various modules delve into areas such as nutrition science, nutritional medicine, and animal ethics. In addition, you will learn about the value chain process of vegan products, consumer behavior of different target groups, as well as the field of ethical and sustainable corporate management. Legal framework conditions for your future work in the food industry will also be taught.
